This light Creme Burlee is a twist from the original Creme Burlee, it is simple to make and need only 7 minutes of cooking time. The result is a very light pudding with a creamy texture.

 

There are only 3 ingredients needed for this light creme burlee. Milk, egg yoke and sugar. Beat one egg yoke with one teaspoon of sugar together, then heat 100ml milk until it just boils, pour 25ml hot milk into the sugar and egg yoke mixture and stir thoroughly, add the rest of the milk and stir. Pour the mixture into to a 3 1/4 inch diameter x 1 3/4 inch tall or 5oz ramekin.

 

Place ramekin in steamer with boiling water and steam for 7 minutes. Let the Creme Burlee cool down, cover the top of the Creme Burlee with granulated sugar, Light the blow torch and direct the flame at the sugar until sugar melts and turn brown.

 

The above quantity is for one ramekin, for two ramekin, simply double the ingredient quantity. You may add or subtract the sugar added to the egg yoke depends on your personal taste.

 

Equipment list : ramekin 3 1/4 inch diameter by 1 3/4 inch tall/5oz, measuring flask blow torch, steamer.
